THESE BUNS ARE PERFECTLY PILLOWY SOFT AND FLAVORFUL WITH THE ADDITION OF AROMATIC SPICES AND RAISINS OR MIXED FRUIt. THE ADDItION OF THE POWDERED MILK IS A PERSONAL SECRET AND INVENTION—NOT TRADITIONAL. I'VE DEVELOPED THIS RECIPE OVER THE PAST TEN YEARS AND IT'S NOW THE RIGHT BALANCE OF FLAVOR AND TEXTURE THAT EVERYONE IN MY FAMILY LOVES. THE TEENS DO NOT LIKE RAISINS BUT PREFER CHOCOLATE CHIPS IN THEIR HOT CROSS BUNS. NOT TRADITIONAL BUT IT WORKS FOR THEM! HOPE YOU ENJOY THIS RECIPE AS MUCH AS WE DO.
Note—I do not like my buns overly spiced as it is over powering and takes away from the enjoyment. This recipe has the perfect balance of spices as I mentioned above. Add or decrease to your preference
3 1/2 cups all purpose flour
1/4 cup milk powder (my own invention but works)
1 tbs instant yeast
1 tsp cinnamon powder, or more to taste
1/2 tsp cardamom powder
1/2 cup brown sugar
1 - 1/2 tsp freshly grated nutmeg
1-2 tsp pure vanilla and/or mixed essence
2 eggs, room temp, whisked
1 cup lukewarm mil (less 2 tbs)
6 tbs melted butter
1/2 cup raisins (and 1/4 cup mixed peel—optional)
1 tsp Grated lemon or orange zest, optional(viewers recommended but did not add to this recipe)
1/2 cup sugar
1/4 cup water
1/2 powdered milk
2-3 tbs heavy cream or milk
